Beef Cutting Instructions


Brisket: Save, Trim for Ground Beef, Smoke and Slice, or Beef Bacon

Smoke and Slice or Beef Bacon How do you want packaged? 1 lb., 1 1/2 lbs., 2 lbs


                                            Short Ribs            Soup Bones

Steaks:  How Thick?  3/4", 1", or 1 1/4" Thick?    How Many Per Package?  2,  3,  4, or 5? 

Choices are: Ribeye, Ribeye Sandwich Cut, Sirloin & Sirloin Tip, 

T-Bone (New York Strip & Tenderloin-Fillet IF don't want T-Bone steaks. It's one or the other cut.) 

Roasts can be made from all of the above, including whole ribeye loin. 

How heavy would you like your roasts? 2 lbs., 3 lbs., 4 lbs., 5 lbs., or loins left whole? 


Round Steak:  Can leave Regular or Tenderize for minute steaks.  How many Per Package?  2,  3,  4,  5?

This cut can also be trimmed out for ground beef, cut into roasts, sliced thin for fajita meat, or used for dried beef or jerky.


Roasts:  Chuck, Arm, and Rump are the kinds of Roasts.  Standard size is 3 lbs.  

How heavy would you like your roasts? 2 lbs., 3 lbs., 4 lbs., 5 lbs.?

   Roasts can be trimmed out for ground beef, rolled, pumped with seasonings, or made into cooked beef. 

          (Cooked Beef is sliced and packaged in juice, which you can warm up for hot beef sandwiches.)


Ground Beef:  How heavy would you like your packages? 1 lb., 1 1/2 lbs., 2 lbs.?

Ground Beef Patties: Our Standard is 1/3 lb. patties.  

What size patty would you like? 1/4 lb., 1/3 lb., or 1/2 lb. patty? 

How many patties would you like in a package 3, 4, 6, or 8 per package?

We also make Sirloin Seasoned Patties. 

What size patty would you like? 1/4 lb., 1/3 lb., or 1/2 lb. patty? 

How many patties would you like in a package? 3, 4, 6, or 8 per package? 

   We strive for 85% lean ground beef.  You can request leaner, but on some beef it is harder to get.


Dried Beef:    Yes   or   No     What size package would you like? 1/2 lb., 1 lb., 1 1/2 lbs.?

Jerky:             Yes   or   No     What size package would you like? 1/2 lb., 1 lb., 1 1/2 lbs.?


Products we can make from your beef:  Summer Sausage, Sticks with or without cheese or with or with out jalapenos, Ring Bologna, Big Bologna, Wieners, Brats and Knockwurst.


Do you want the heart, liver, or tongue?   

Yes or No 

Heart and tongue can be ground into the hamburger per customer request.
