Pork Cutting Instructions

                                                   Spare Ribs:

           *If you want Baby Back ribs you have to have boneless chops or boneless loin*

Yes or No

(Ribs can be barbecued, dry rubbed or trimmed.)


Loin:

(Loins can be Pork Chops, Whole Loin, Canadian Bacon, or trimmed.)

Whole loin -  Leave whole? Cut in 1/2? Cut in 1/3?

*Boneless Loin weighs on a average hog 8-9 lbs.*

or

Pork chops - How thick? 

1/2'' (Breakfast chop), 3/4'' (Standard Cut), or 1 1/4'' (Iowa Chop)

How many per package?  2, 3, 4, 5, or 6 per package?

Would you like your pork chops bone - in or boneless?

Cured and smoked (fully cooked - just heat and eat), or Fresh?

*Pork loin can be tenderized.*


Shoulders:

(Shoulders can be Pork Roasts, Pork Steaks, Cottage Bacon, Cooked Pork, Pulled Pork, or trimmed.)

*Cooked Pork is sliced and packaged in juice.*

How heavy of roasts? 3 lbs., 4 lbs., 5 lbs.? 

*A average crock pot size is a 3-4 lb. roast.*

Cottage Bacon?

*Cottage Bacon is a section of the shoulder, a leaner bacon, covers a slice of bread fairly nicely, and you cook just like belly bacon.*

Hocks: 

(Hocks can be wrapped fresh, cured and smoked, or trimmed.)

*People use cured and smoked hocks for bean and ham soup.*


Hams: 

(Hams can be fresh, cured and smoked, shaved, cooked pork, pulled pork, honey ham and swiss products or trimmed.)

*On a average hog each ham can weigh up to 15 lbs.*

*On a average hog there is approximately 30 lbs. of trim.*

Seasoned Sausage (our mild breakfast sausage):

*makes great biscuits and gravy or sausage, egg, and cheese sandwiches.*

(Can be packaged in bulk or patties.)

Honey Ham & Swiss Sticks, Honey Ham & Swiss Little Links, Honey Ham & Swiss Summer Sausage, All Pork Ring Bologna, Wieners, and Roger's Sausage Links (taste similar to little sizzlers and are fresh).

Fresh is raw pork.

Cured and smoked (all one process) is fully cooked pork.

Minimum Amounts for Ordering:

Sticks/Summer Sausage/Bacon/Jerky - 5 lbs.

ANY Links - 10 lbs.
